Roasted Garlic Hummus

1 head of garlic

1 1/2 cups cooked garbanzo beans (chickpeas)

Juice of 2 lemons

1/4 cup tahini

1 1/2 tspn ground cumin

1 tspn black pepper

1 1/2 tspn salt

3/4 tspn cayenne pepper

1 tbsn olive oil


  1. Preheat oven to 375 degrees. Cut the top of the garlic and wrap in foil, Roast for 45 minutes.

  2. Drain garbanzo beans, simmer for 5 minutes on low heat.

  3. When garlic is done, squeeze pulp into bowl discarding skins.

  4. Puree beans along with garlic, add remaining ingredients.

  5. Sprinkle cayenne pepper on top with a drizzle of olive oil.
