Roasted Garlic Hummus

1 head of garlic
1 1/2 cups cooked garbanzo beans (chickpeas)
Juice of 2 lemons
1/4 cup tahini
1 1/2 tspn ground cumin
1 tspn black pepper
1 1/2 tspn salt
3/4 tspn cayenne pepper
1 tbsn olive oil
Preheat oven to 375 degrees. Cut the top of the garlic and wrap in foil, Roast for 45 minutes.
Drain garbanzo beans, simmer for 5 minutes on low heat.
When garlic is done, squeeze pulp into bowl discarding skins.
Puree beans along with garlic, add remaining ingredients.
Sprinkle cayenne pepper on top with a drizzle of olive oil.
